Green Bean Salad

I don't particularly enjoy cooking so I'm always on the lookout for super easy, quick and delicious healthy recipes. This is one of my favorites and I thought you might enjoy it as well. The ingredients are simple and prep is a cinch!

You'll need:
A bag of Green Beans - in the produce section like this, not frozen
3-4  Radishes
3 Tbs. Cilantro
8-10 Cherry Tomatoes
3 Tbs. Feta Cheese

2 tsp. Olive Oil
Dash of Balsamic Vinegar
Salt & Pepper


 


Bring a medium pot of water to boil.
While the water boils do the following:

-Chop the cilantro
-Slice the radishes
-Halve the tomatoes

(See that serrated knife on the  right? It's a tomato knife and it's the most fabulous invention ever. No more squished 'maters!)




Add the beans and cook for 3 - 4 minutes. (I think the beans taste best in this salad a little crunchy, if you agree don't overcook!) Drain and place in a bowl of ice water to stop the cooking. Drain again. (This was the ice bath portion, in case you were wondering.)



While the beans chill, mix oil, vinegar, salt & pepper in a large bowl. I said 2 tsp. of oil above but there's really no science since the size of the salad varies slightly each time. Just start with a little and add a bit more if needed. You don't want to drown the veggies, just enough to make a nice light coating.



Toss everything into the bowl of oil mixture.



Stir gently to coat the veggies.


The End.

Seriously, that's it. So easy & sooo yummy. This recipe serves roughly 2 people. I fill up on it with a big hunk of baquette, hubby enjoys it as a large side with a meat option. There usually aren't leftovers but on the rare occasion there have been, it keeps excellent for a next day lunch.

  7. Oooh, this looks delicious!! We essentially stop cooking during the summer (well, stop using the oven which actually eliminates a large portion of our winter repertoire) because the oven heats up the house so much and we don't have central air. I'm sure this little salad will be a fast favorite when the weather heats up!
